If you’re like me, you may have an abundance of cucumbers right now. I also really haven’t been in the mood to cook lately. All I want is cool, refreshing, and crunchy food!
Cucumber lime granitas are a perfect dessert for a hot summer evening. There’s not much sugar in them so you don’t have to feel guilty either!
2 large cucumbers, peeled, seeded, and roughly chopped (if you use English cucumbers, don’t bother peeling or removing the seeds)
1/2 cup lime juice (add zest if using fresh lime)
3 mint sprigs
1/4 tsp salt
1 cup water
1/4 cup sugar (I prefer coconut sugar)
1. Combine water and sugar in a saucepan. Heat on medium until sugar is dissolved.
2. Remove from heat and add mint. Let stand 10 minutes.
3. Add sugar water mixture and remaining ingredients to blender. Purée until smooth.
4. Pour mixture into baking dish. Cover and freeze for 45 minutes. Scrape with fork. Freeze. Scrape with fork every 30-45 minutes until mixture is completely frozen (around 3 hours). Remove from freezer and fluff with a fork.
Makes approximately six 1/2 cup servings.
