March Recipe: Spiced Couscous

Hello all, Chef Myke here. This month I’m going share with you a yummy Couscous recipe that I just LOVE. It is such a light and fresh side dish that is such a joy to eat. You only need a few ingredients and it can only take around 15 minutes! If you don’t already have curry powder, Festival has a nice one in their bulk seasoning section across from the organic department.


1 cup full fat coconut milk ¾ cup couscous ½ cup chopped dates Juice from ½ lime (more or less per taste) ½ teaspoon curry powder Pinch of salt Directions:

Add the coconut milk, lime juice, curry, and salt to a medium sauce pot. Over medium heat bring to a boil, stirring occasionally so as not to scorch the milk. Once boiling, add the couscous, and dates and stir to mix. Remove from heat, and cover for 10 minutes. Fluff with fork and serve.
